What I Made this Week

I have two easy to throw together, low carb snacks/lunches to share with you today. I’ve been inspired by pins of chicken or tuna salad in a lettuce boat recently, so I decided to throw one together.  It’s not so much a recipe as a gathering of ingredients.  Basically, I eyeballed these, so go with your gut if you try this.

Chicken Salad with Cranberry and Bacon

1 cooked chicken breast, chopped

2T dried cranberries

2 slices cooked bacon, chopped

1T mayonnaise

1t ranch dressing

Salt and pepper to taste

Mix all the ingredients.  Serve on a bed of lettuce.

I also made a cute little mini-sandwich out of cucumbers inspired by a recipe on Try for DIY.

I liked the crunch of these.  I made mine with cheddar cheese and salami, but the inspiration was colby and roast beef, which sounds like an equally delish option.  I would normally eat the cheese and salami alone, but I feel a lot better about it when there is a veggie involved.

I’m really trying to get back on the low carb regimen, so help me out!  What are some good snacks and lunches?
