What I Made This Week – Gluten Free Snickerdoodles

It’s back to school for us tomorrow and I thought it would be fun to make something delicious for the kids snack that was sort of healthy, too.  I had some leftover almond flour so I did a quick Pinterest search for something I could make with that and found a recipe for Almond Flour Snickerdoodles on Meaningful Eats.  I love this recipe because I had everything I needed in the pantry already.  The almond flour is not a staple for us (although that may change now that I’ve tried these cookies!), but the rest is pretty simple stuff.

Gluten Free Snickerdoodles

I have to say, of all the things I’ve tried with gluten free substitutes, this is my favorite.  These cookies are delicious and sweet (they are loaded with sugar, after all) and they had a nice texture.  They didn’t taste like something was missing, you know what I mean?  My kids tried them and they both liked them, too.  Ok, so my son said they were pretty good, but that’s basically the best you’re going to get out of him!
