What I Made This Week – Crock Pot Cheesy Mexican Chicken

One thing I do love about Fall is fall food.  I broke out the crockpot this week and made a cheesy Mexican style chicken to use as taco filling.

I mostly followed this recipe from Gonna Want Seconds.  It was really easy to make, the hardest part was shredding the chicken.  Basically, you just plop everything in the crockpot and let it cook.  I left mine in for close to 4 hours on high.  I deviated from the recipe a little.  I left out the corn that it calls for and also the chiles because I don’t like things too spicy.

People, this came out so good.  Seriously.  Most of the time when I make stuff in the crock pot it comes out *good*, but not super awesome.  This came out super awesome.  My daughter had some and she loved it.  It’s enough spicy with the taco seasoning for me, but not too much.  More smokey than hot hot.  I’m slightly obsessed with Mexican food and this definitely hits the spot.  I can’t wait to have it for lunch tomorrow!
