What I Made This Week – Buffalo Chicken and Tater Tot Casserole

Oh.  My.  God.  Why has no one told me that Tater Tots are gluten free?  Do you know how many things I can do with Tater Tots?  Me neither, but I’m aiming to find out.  First up, is a Buffalo Chicken and Tater Tot Casserole.

I found the recipe at Premeditated Leftovers (is that not an amazing blog name??).  I’ll definitely be poking around to see what other goodies I can whip up.

This recipe was really easy and my kids really liked it, although, I will caution you, my kids like slightly spicy food.  This isn’t super spicy because it has the ranch dressing to cut the flavor of the buffalo sauce, but it’s definitely not bland either.  I did skip the green onions because 1.  I didn’t have any and 2. my kids would pick them off.  I was thinking it might be fun to have some celery in there?  Not totally sure about that, but something to think about.  Also, I used about a 1lb of chicken, maybe even a little more and it could definitely have used more like 2 lbs of chicken.  The potato/chicken ratio was a little heavy on the potato side, but really, what’s wrong with that?

Now that I know that Tater Tots are gluten free, you can expect to see more of them around here!
