Simple Summer Salad with Tomato and Nectarine

I’m so excited to share this recipe with you!  I kind of stole it from a lovely woman I met at a barbecue for the 4th of July.  It is so easy and delicious, I actually remembered it without writing it down (pretty much) and then added a little something extra to make it my own.  The strange thing is, if offered to me separately, I would eat neither a tomato nor a nectarine, but for some reason, presented together with some vinaigrette, I was all in.  I think you will be, too!  Here’s the most Simple Summer Salad with Tomato and Nectarine.

I’m buying more tomatoes and nectarines when I go grocery shopping because I ate the entire salad myself and I still want more.  The flavors are fresh and sweet and tart all at once.  It took me maybe 10 minutes to prepare.  Mostly because I made a rookie nectarine mistake.  I really don’t think I’ve ever eaten one before and I thought I would start the slicing process by running my apple corer through it.  Fun fact:  Nectarines don’t have cores, they have pits.  So slicing them was a bit of an adventure at first, but I got the hang of it eventually.

Simple Summer Salad with Tomato and Nectarine

  • 2 Cups Grape Tomatoes (Halved)
  • 2 Ripe Nectarines (Thinly Sliced)
  • 1/4 Cup Goat Cheese (Crumbled)
  • 1/3 Cup Extra Virgin Olive Oil
  • 1/4 Cup Apple Cider Vinegar
  • 1/2 tsp Lemon Juice
  • Pinch Salt
  • Pinch Pepper
  • 1 T Chopped Cilantro (optional)
  1. Add halved tomatoes and thinly sliced nectarines to salad bowl.

  2. In a separate bowl, whisk together Olive Oil, Apple Cider Vinegar, Lemon Juice and salt and pepper.

  3. Drizzle salad dressing over the tomatoes and nectarines, to coat.  I didn’t use all of the dressing!  Start with a little, taste it and see if you need more.

  4. Top salad with Goat Cheese and Chopped Cilantro.

So easy and so delicious!  I enjoyed making the Apple Cider dressing, but you could also use store bought.  I haven’t mastered dressing making yet and it seems to be a bit of an art form.  Truthfully, the dressing here is really just that, it’s enhancing the flavors of the tomatoes and nectarines and just kind of chilling in the background.  You’re not going for “kill the veggie taste with blue cheese” type of flavor here.

Ok, I’m off to the grocery store with two things on my list!  Wait, three!  I need goat cheese, too…
