Anyone else have bowls full of apples in the house?  Ok, I only have one bowl, but really, I can’t resist buying apples this time of year.  I’m trying out a new low carb diet (which technically doesn’t include apples, but I’ve never been good at the technical side of things) and I really don’t want to make apple pie or apple bars or apple turnovers with my apples.  Because I will eat all of them.  One at a time and in one sitting.  So I set out to find some apple recipes that weren’t packed with carbs.  I found 10 Apple Recipes You Haven’t Thought of Yet!

The first time I ever had an apple in a salad was when I was in Spain when I was in college.  At the time, it wasn’t something you could get at Chili’s and I was totally surprised by this ingredient in a salad.  Now, if I’m in a salad mood, I’ll usually order the one with apple.  I happen to have all of the ingredients, more or less, for this one in the house, so I think it will be lunch today!

This dish has a three of my favorite things!  Brussel sprouts, sweet potatoes and bacon!  Who could ask for anything more?  My kids would TOTALLY eat this. I might have to de-skillet it for my son, meaning, make a chicken section, a brussel sprout section, an apple section and a sweet potato section on his plate. He’s not into the “perfect bite”. He’s in to eating all the chicken, then all the brussel sprouts and so on.  It’s a very orderly dinner with him.

That’s a cozy sandwich, isn’t it?  It’s like something you would get in a little cafe in Vermont.  Also, I love that cutting board, but I digress.  The apples would make such a nice crunch in this sandwich.  Like adding potato chips except healthier.

I love a good slaw and this one is very unique.  Imagine this as a nice cold side for Thanksgiving.  It’s got such pretty color and would be a great little bit of tartness with all of that amazing savory at Thanksgiving.  And then imagine it the next day on your leftover sandwich.  You’re Welcome.

DIY Apple Cookies from Paleo Eats and Treats

I’ve actually made these before and they are amazing.  They are way more of a treat than you expect.  You don’t feel like you’re eating an apple slice with some peanut butter slapped on top.  It really does feel more like a cookie.  And of course they are super easy to make and very customizable.  And, if you’re looking for more amazing Paleo friendly snacks, definitely do a deep dive on Paleo Eats and Treats.

I had no idea how simple it is to make Apple Butter!  If you buy this stuff in the store, it’s crazy expensive.  I love that this one has no added sugar.  I’m certain my kids would love this if I smeared it on some toast.
