Bone Broth Diet Update – Week 2

So, week two on the Bone Broth Diet (more info on my Bone Broth Diet journey here and here) didn’t go so well.  The bad news is that I cheated a lot last week.  I bought a pan of gluten free brownies from Wegman’s and ate the entire thing over the course of a few days.  Not good.  And not allowed on the diet.  I only made it to dinner on my second fasting day of the week.  Also, not good.  There were various other indiscretions throughout the week as well.  The good news, however, is I somehow miraculously still lost a pound.  I was really disappointed that it wasn’t more than that, but, obviously not surprised.  It’s hard to lose weight when you eat like crap.  I’ve tried to really recommit myself and get back on track this week, so we’ll see how I do.

I did make a delicious recipe from the book this week.  Slow Cooker Chicken and Sweet Potato Curry.  That might be one of the best parts of this diet.  I’ve discovered some new recipes to add to the weekly meal plan.

Chicken and Sweet Potato Curry

Ingredients

2 Sweet Potatoes – cut into 2 inch cubes

1 lb. boneless, skinless Chicken Breast

1 can (14.5 oz) Diced Tomatoes

1/4 cup Tomato Paste

1/2 cup Chicken Bone Broth

1 Sweet Onion – finely chopped

2 Red or Yellow Peppers – finely chopped

2 cloves Garlic – minced

2 teaspoons Chili Powder

2 teaspoons Ground Cumin

1 teaspoon Curry Powder

3/4 teaspoon Himalayan or Celtic salt

1/8 teaspoon Black Pepper

2/3 cups full fat Canned Coconut Milk

Directions:

  1.  Add the sweet potatoes, chicken, tomatoes, tomato paste, broth, onion, pepper and spices to the slow cooker.
  2. Cook on high for 4 hours or low for 6 hours.
  3. Before serving, shred the chicken with a fork stir in the coconut milk and warm through.

This was SO good.  I’ve never eaten, let alone cooked, a curry before. This is definitely something that will be on the menu again.  And again.  And if you are interested in buying the Bone Broth Diet book, you can get it here.
