What I Made This Week

I found another gluten free recipe for Peanut Butter Chocolate Chip cookies last week that I had to try:

But the link to the recipe is here from Whole Foods.  It is a very easy recipe and I like that it doesn’t have any ingredients that I don’t usually have on hand.


That’s sugar, an egg and baking soda.  Pantry staples, right?  You mix those together with your beater.


And that, friends, is peanut butter, chocolate chips and vanilla extract. Beat those with the beaters, too.  I bet those are in your pantry, too.  If you don’t have the chocolate chips, you can skip them, but I drove all the way to the grocery store to get them.

Easy right? No expensive almond flour or sorghum or tapioca flour.  And, they are a hit with all four of us here.  Even my daughter, who, (GASP!) doesn’t really like sweets.  Give them a try!
