I know what you’re thinking. Who makes soup in August? Me. I do. I love soup and this one is light, so it will be a perfect lunch in my freezing cold office. I found the recipe, 20 Minute Turkey, Bean and Spinach Soup on the blog Rachel Cooks. There are some awesome sounding recipes on there and I will definitely be going back for more. Here’s what mine looks like:
I really loved the soup. I do believe it’s very low in carbs. It’s not paleo, because of the beans, but it’s most definitely healthy. That’s a whole lot of spinach in there. It’s very tasty and fresh and light. And it was really very easy to make. It did take about 20 minutes, just as the recipe says.
I made something else this week, too. First, I have a confession to make. I hate water. I don’t like the taste of it and it even makes my stomach a little sick if I drink it without eating. Instead of water, I drink a LOT of coffee and soda throughout the day. I decided to try a homemade flavored water. I saw one labeled Skinny Detox Water from Budget Savvy Diva and thought I’d give it a whirl.
I have to say, it’s definitely a lot better than plain water. The lemon is great and the cucumber is very interesting. I think I didn’t put enough mint in because I can’t taste it at all. I’m going to try to do two glasses a day for the next week and cut back on the soda and coffee a bit.
