What I Made This Week – DIY Ice Cream Cake

Ppphhhwwwwwwwwwww…  That’s me blowing the dust off the keyboard.  I took a nice holiday break and I think I will probably have a quiet week while I continue to bask in the post Christmas calm.

Rewind to pre-Christmas, Christmas Eve to be exact, however, and I have an awesome recipe to share!  It’s not even really a recipe,it’s more like a DIY.  Except super easy.

I pinned the recipe ages ago from Inspired Craft Ideas.  It’s fun because it is totally customizeable.  You can choose your families favorite ice cream and toppings (think crushed candy, nuts, etc!).  And it really was easy.  There is an instruction in the recipe that calls for flipping the assembled ice cream sandwiches onto the serving plate before “frosting” it and I was sure it was going to be a disaster.  That’s usually where I end up spilling things on the floor.  But, it didn’t happen.  Perhaps a Christmas miracle?  Everyone loved it and I will definitely be making it again.
