Salmon Cakes with Dill Dip

Salmon is one of my favorite foods.  Generally, I bake it in the oven and eat it with some spinach.  I found this recipe for Salmon Cakes from Vikalinka, which, by the way, looks like an amazing blog with gorgeous pictures and delicious recipes, and decided to give it a go.  I followed the recipe as closely as possible, except I switched the flour for gluten free flour.  It didn’t seem to make much difference, other than perhaps not having quite the same fried look.

 

I do have a little cheat.  Included in the recipe, is the recipe for a sauce to eat these with.  I didn’t make that.  It calls for Greek yogurt and I don’t know why, but I just can’t get on the Greek yogurt bandwagon.  Instead, I used my favorite dip in the whole wide world, Marzetti’s Dill Dip.  It’s so good.

Dip cheat, or not, the Salmon Cakes were soooo good.  I can’t figure out a way to properly express with words when I really like the way something tastes, so I just add letters to “so”.  These are definitely going to be happening again and again.  I’m having them for lunch tomorrow!
